• Sift the flours into a large mixing bowl. Rub in the yeast using your fingertips. Add the rosemary, olives, seeds, coffee, olive oil and finally the salt.

• Add sufficient water and mix to a firm dough.

• Turn the dough out onto a lightly floured work surface. Knead the dough for 8 minutes until it is smooth and elastic.

• Shape the dough into a ball and place in a lightly floured bowl. Cover with a baking cloth or clean tea towel and leave to rise in a warm place for 1 hour.

• Remove from the bowl and re-shape into a loaf on a lightly floured work surface, kneading the dough to make a spine or seam on the underside.

• Place on a baking tray dusted with flour and leave in a warm place for 1 more hour.

• Preheat the oven to 200°C (390°F). Score the top of the loaf with 3 diagonal cuts. Make the cuts swiftly and cleanly with a sharp knife. Do not pull or drag the dough.

• Bake for 25 minutes until the loaf is golden brown and sounds hollow when tapped. Cool on a wire rack.
